Kake udon is a comforting Japanese noodle soup that’s perfect for a pick-me-up. The crunch from the tempura bits and light heat from Shichimi Togarashi pair so well with the flavorful broth and chewy udon noodles. Feel free to customize the toppings to your liking!

Ingredients

  • 2 servings udon noodles

  • 2 cups dashi (2 cups water, 2 teaspoons dashi powder)
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • pinch of salt

Directions

  1. Cook udon noodles based on package instructions. Drain and portion noodles into two bowls.
  2. Add water into a pot and bring to a light simmer. Turn off heat. Add in dashi powder, soy sauce, mirin, sugar, and salt. Mix and pour over the noodles.
  3. Add in scallions, tempura flakes, Shichimi Togarashi, and other desired toppings. Serve immediately and enjoy!

    This is a wonderful recipe. I add six shrimp to the coup for two servings. It’s a light and delicious dinner.
