Appetizers

Yuzu is a citrus fruit that tastes like a combination of grapefruit, lime, and lemon. It’s the perfect accompaniment to rich foods, like these Fried Cauliflower Wings! Cauliflower gets a light batter made with soda water, and is fried to golden perfection, before a dusting of our house-made Yuzu Salt! Dip these in a Greek Yogurt or labneh dip for the perfect appetizer or game day grub. We also love these on a salad, in a sandwich, or just right off the tray for a savory snack.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1/2 cup self-rising flour
  • 1/3 cup cornstarch
  • 1/2 teaspoon Oaktown Spice Shop Yuzu Salt, plus more to garnish

  • 3/4 cup soda water
  • 2-3 cups neutral oil for frying

Directions

  1. Add the cauliflower to a large bowl. Combine with flour, cornstarch and Yuzu Salt. Toss to distribute.
  2. Add the soda water, and stir to evenly coat each floret.
  3. Meanwhile, heat the oil in a deep saucepan to 350F (or until a small piece of batter bubbles immediately).
  4. Fry the cauliflower for 8-10 minutes, flip, and cook for an additional 8-10 minutes, or until golden. Repeat with all the florets, being careful not to crowd the pan.
  5. Transfer to a paper-towel lined baking sheet.
  6. Sprinkle with additional yuzu salt before serving. Enjoy!

    Hi Betsy,

Our recipe developer, Micah, recommends changing the batter if you plan to bake these! Instead of flour and seltzer, she recommends eggs and panko flakes, with a ratio of around 3 eggs and 1-1.5 cups of panko per head of cauliflower. I hope you enjoy the recipe!

Can you roast the cauliflower instead of frying? I’m cooking for a large group.
