Spice up your salad with these bistro-inspired goat cheese balls rolled in a fragrant, nut-free Dukkah! Sweet, salty, earthy and herbaceous flavors marry in this simple salad for a satisfying side dish that hits all the notes.

Ingredients

  • 3 tablespoons Oaktown Spice Shop Dukkah

  • 4 ounces goat cheese (chevre)
  • 6 cups mixed greens
  • 1 cup cucumber, sliced
  • ½ cup blueberries
  • ½ cup steamed beets, sliced
  • 2 green onions, chopped
  • 1 cup fresh mint leaves, torn

  • 1 teaspoon Oaktown Spice Shop Dukkah

  • 3 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon maple syrup
  • ¼ cup olive oil
  • Pacific flake or kosher salt, to taste

  • black pepper, to taste

Directions

  1. Place the Dukkah in a shallow dish.
  2. Use a measuring spoon to scoop goat cheese, ½ tablespoon at a time, and roll into balls.
  3. Roll the goat cheese ball in the Dukkah to coat. Set aside.
  4. Combine the greens, cucumber, blueberries, beets, onion, and mint in a bowl. Top with goat cheese balls.
  5. Combine all the dressing ingredients. Drizzle over the salad. Toss and enjoy!
